During the critical first 48 hours of drying, the cherries are turned frequently to ensure even evaporation. This method results in a remarkably clean and consistent cup, which can be challenging to achieve in Ethiopia’s Gedio region. The final brew often evokes the comforting taste of freshly baked chocolate blueberry muffins.
